We at SS Enterprises produce a unique product that has been a taste treat for thousands of years. Recorded history shows even the Romans prized this delicacy highly for it's distinctive flavor and texture.

 

 

The Flavor 

 

Squab is a bird that has a taste all it's own. The entire bird has a very rich dark meat that goes quite well with a large variety of marinades. Chefs enjoy preparing it because the end product is only limited to their imagination. It is absolutely amazing how many different tastes can be acquired using different cooking techniques and marinades. You can sear them on a grill, use a rotisserie, slow cook them in a crockpot, de-bone and stir fry, bake, broil or even sauté them...all a delight to the palate.

 

The Texture

 

Texture is second to none. Tender is the word to use. These birds have never flown or walked because the parents feed them in the nest. They are pulled from the nest just before they are able to jump out or fly. Close monitoring is very important. If a bird jumps out of it's nest it is no longer considered a squab. It is then a young pigeon. We have a high degree of quality control because not only do we raise them, we also process them right on the farm under USDA inspection. There is no transportation, trauma or stress to the bird. We believe this operation produces the highest quality squab possible.

 

The Feed
